When someone mentions Letná at Pilot Café, everyone knows who’s in control of the shift. Tereza Sekerková is our operations manager — or more precisely, our air traffic controller — making sure the café runs smoothly from the first morning filter to the last dessert before closing.
She joined Pilot more than two years ago as a barista who wanted to be part of the team that would shape the café. “Later, I became — hopefully — an integral part of our cafés,” she says. And that’s something not only the entire crew but also our loyal passengers would surely agree with.
In the café, she does whatever needs to be done — from coffee and service to cooking. “Primarily, I’m a barista, but I also enjoy cooking and baking, so I’ll jump in wherever I’m needed,” she admits. As a dependable operations manager, Tereza simply always knows what’s happening — on the floor, behind the bar, and in the kitchen.
What she enjoys most about her work is the connection between coffee and food. “I’m always curious about who’s opening a new café or restaurant, what they’re creating there, and how their business runs. There are very few cafés in Prague I haven’t been to,” she laughs. These days, she also knows exactly what she likes herself. “Working in a café got me all the way to filter coffee — I drink it by the liter and can never get enough.” Even at home, she has quite the setup, one she says she’s definitely proud of.
She sums up her typical day simply: “Coffee, work, coffee, work, coffee, work.” What makes her happiest is when everything runs smoothly and the café is buzzing. “When I sell everything I planned to and there’s a line out the door,” she says without hesitation.
Outside the café, she has another full-time job — motherhood. “Making pancakes at 10 p.m.? No problem for me,” she admits with a smile. And if she weren’t managing the café’s flight operations, working with children is what she’d love to do.
Tereza says she has a special talent for “making things more complicated than they are.” But that’s exactly what helps her handle even the toughest shifts with ease. At first glance, she might seem strict, but those who know her know she’s open, fair, and kind. She just doesn’t know how to sit still — perhaps a trace of her 14 years of playing handball.
Thanks to Tereza, Pilot Café — especially the Letná location — maintains a steady course and a crew that sticks together. Because when operations are led by someone who loves coffee, food, and even the everyday café chaos, the flight runs smoothly — without turbulence.
