When Martin Mac\u00edk first started thinking about opening his own caf\u00e9, it wasn\u2019t a strategic business plan \u2013 it was simply the natural fusion of two worlds: his and his wife\u2019s. She had been working in gastronomy for years, gradually climbing her way up to a managerial role. He was looking for a way to bring marketing back to real life \u2013 closer to people, to places, to real stories. The caf\u00e9 became a natural meeting point of those two perspectives. A place where good food, great coffee and a sense of community could take off together.<\/p>\n

In 2019, they opened their first location in Letn\u00e1. Back then, Martin did pretty much everything himself \u2013 from construction work to city hall meetings to daily operations. \u201cIt was an intense time. I\u2019d probably do many things differently today. But that\u2019s exactly what taught me a lot \u2013 about myself, and about running a caf\u00e9,\u201d he recalls. He was also surprised by how vibrant and interconnected the Czech coffee scene is \u2013 like a small community where everyone knows each other, but there\u2019s still room for your own signature.<\/p>\n

Four years later, he opened a second location \u2013 this time in Pankr\u00e1c. \u201cIt was a completely different challenge,\u201d he says. \u201cPeople there weren\u2019t really used to specialty coffee \u2013 but that\u2019s exactly why it made sense. To bring quality to a place where it wasn\u2019t yet expected.\u201d<\/p>\n

In Pankr\u00e1c, Martin even has his favourite table. And the same ritual every morning: a glass of water, a fresh orange juice, and finally a cup of filter coffee. \u201cFilter is what suits me best. It\u2019s gentle, clean \u2013 it hides nothing. You can tell everything from it \u2013 where the coffee comes from, how it\u2019s been processed, and how it\u2019s been treated along the way,\u201d he explains.<\/p>\n

Even though he\u2019s no longer behind the bar, Pilot Cafe is still part of Martin\u2019s daily flight plan. He hasn\u2019t forgotten those early moments, jumping behind the counter without any barista experience \u2013 sometimes straight into the chaos of peak hours. \u201cI couldn\u2019t make an espresso, but I did manage filter \u2013 and I still do it today, every morning in the office with my Fellow set. It was a bit of a punk start, but a great reality check too.\u201d<\/p>\n

Today, Martin is surrounded by a team he can truly rely on. And that\u2019s key for him \u2013 keeping the atmosphere of the caf\u00e9 personal, relaxed, but still professional. \u201cI want people to leave not just with a great coffee, but with a good feeling. Something small that makes their day better \u2013 a smile, a moment of calm, or just the chance to be with themselves for a bit.\u201d<\/p>\n

Looking back, he considers their biggest success to be the fact that the Letn\u00e1 caf\u00e9 survived the pandemic \u2013 and that they managed to open a second spot in a place where specialty coffee had to carve out its space. \u201cIt was a risk, but I believed that if we did things honestly, people would respond to it,\u201d he says.<\/p>\n

Besides caf\u00e9s, Martin has another world \u2013 motorsport. \u201cIt\u2019s a lifestyle that spills over into everything else I do.\u201d Alongside Pilot Cafe, he also runs a media and marketing agency \u2013 MM Production \u2013 which handles not only his own brands, but also a range of external clients. Motorsport, marketing and caf\u00e9s have one thing in common: the tiniest details and split-second decisions can make all the difference \u2013 even if they\u2019re not always visible at first glance.<\/p>\n

If he had never opened a caf\u00e9, he\u2019d still be doing what he\u2019s doing now. \u201cRunning a business gives me freedom \u2013 and responsibility. And the caf\u00e9 adds a human layer to that. That\u2019s what I enjoy,\u201d he smiles.<\/p>\n

His approach is best summed up by a simple motto \u2013 one he doesn\u2019t hang on the wall, but lives by every day: \u201cNobody cares, work harder.\u201d<\/p>\n
