Everything runs on time. Petra handles not only the coffee machine and the floor but also the people around her with ease. At Pilot, she\u2019s a barista, service staff, operations lead\u2026 and on top of that, an HR manager.<\/p>\n

She\u2019s been part of our caf\u00e9 for a little over two years now. Her journey here was almost suspiciously \u201cwell-timed.\u201d She was looking for a job in gastronomy\u2014something she\u2019d always enjoyed. Thanks to a friend (now a colleague, \u201cBarunka\u201d), she discovered the newly opened Pilot Cafe in Pankr\u00e1c. An interview, a trial shift, a part-time job\u2026 and then a smooth transition to full-time. \u201cAnd now I\u2019m here.\u201d<\/p>\n

What she loves most about the job is the mix of routine and variety. Every day is different, yet somehow the same. One day, it\u2019s the morning rush and a long queue; the next, unhurried conversations with regulars who are no longer just guests but almost friends. In between\u2014new faces all the time. Petra enjoys both.<\/p>\n

Favorite coffee? It depends on her mood and the weather. An oat flat white or a filter. The reason is simple: \u201cCoffee is love.\u201d In Pankr\u00e1c, that motto hardly needs explaining.<\/p>\n

In the morning, Petra prepares, sets things up, and sets the pace for the arrival of the first customers\u2014ideally managing to drink a hot coffee herself\u2026 and then it takes off. Morning peak, familiar faces, one coffee after another\u2014sometimes all the way into the evening.<\/p>\n

What makes her happiest during a shift? When \u201cour people\u201d come in. The regulars who\u2019ve become a natural part of the atmosphere. Thanks to them, Pilot has its soul.<\/p>\n

Her go-to soundtrack for starting a shift? \u201cKr\u00e1snej den\u201d by Ben Cristovao or \u201cHeat Waves\u201d by Glass Animals. One song boosts the mood and energy at the start; the other keeps a pleasant rhythm once the operation is in full swing.<\/p>\n

And outside of work? She likes sports (running and movement in general give her a natural reset), spending time with friends or family\u2026 and sometimes just a series, a movie, switching off. A balance you really need in gastronomy.<\/p>\n

If she didn\u2019t work in a caf\u00e9? She says she\u2019s lucky because she enjoys her job. But if she could choose absolutely anything\u2026 she\u2019d race cars. Ideally F1. And if that sounds like a joke, it\u2019s only until you find out that cars and fast driving are her real passion. Maybe not something you\u2019d guess at first glance. But focus, attention to detail, and keeping your nerves steady? Useful both on the caf\u00e9 floor and on the track.<\/p>\n

When asked about her superpower, Petra modestly laughs that she hasn\u2019t discovered it yet. We\u2019d allow ourselves a small intervention from the control tower: her superpower is staying calm in an operation that\u2019s seldom calm\u2014and making sure both the team and the guests feel like they\u2019re on a smooth flight.<\/p>\n

Thanks to Petra, Pilot Cafe in Pankr\u00e1c has a stable flight plan, a well-chosen crew, and an atmosphere people love to return to. Because when operations are in the hands of someone who loves coffee and can stay calm even in chaos, the flight goes smoothly\u2014without unnecessary turbulence.<\/p>\n<\/div>
